    Texas BBQ is really brisket and sausage. anything else and it's texas trying to pretend. some places can kind of pull it off, and many can't.

    but texas sausage ain't the same as chi-town sassage. and doesn't really try to be.

    I don't want to derail or anything, but I can say, heretical as it may be, that I've had both CA and NC barbecue and I prefer the former. Admitted bias, and also TRY AND SAY "u just didnt have the right nc bbq" I DARE YOU, but still. There's no accounting for taste. It seems to me like when it comes regional specialties, so much of that is in the sauce, and I for one prefer sauceless.

    Tell me then, what makes good barbecue? I've read over the thread and so far all I've seen is regional mentions, I'm asking for specifics here. Pork, I know, is the favorite (if not mine, Beef4Lyf), and full disclosure, I spent my time in Eastern NC, I'm not certain if there's a noteworthy distinction there.

    That too. When I lived in St Louis I got my fill of KC style, which isnt too bad and have had Memphis quite a few times when I used to party out on Beal street and visit family. Im down here in TX for the summer and Kyo is down here as well and im sure he can tell you that beef bbq is fucking terrible, its bbq in name only. Its more of a meat slathered in sauce, nothing special whatsoever. But CA is bbq isnt even on the radar, that's almost as crazy as saying Montana pizzas rival that of NY and Chicago or North Dakota can rock Pennsylvania in regards to cheese steaks.

    Some shit just ain't natural. I'm sure someone in ND does indeed make cheese steaks, but to compare them to Philly is insane, same goes for BBQ. I personally am not shitting on anyones take on the food, just saying that besides Carolina style, Memphis style, KC/STL style and Texas you don't hear SHIT about BBQ. Trying to Debo cali on the bbq map just wont work.

    Dissing the hog is serious business son, im trying hard to not drag niggas mammas into this fracas lol.
