Make sure you check out the Golden Nugget in Old Las Vegas. Some casinos have buffet for the entire day. As in you pay for breakfast but you get to eat there the entire day for 1 cost.
I went to the Golden Nugget buffet when I was there, it's so not worth it, applebees is better.
Stick to the big strip casino buffets.
Also, I went to Stratosphere too, cause at the time they had a few European Roulette wheels (single 0, instead of 0/00, makes the odds slightly better). Put down $10, played the colors twice, pocketed my original, and dropped the other $30 on a ticket to Bite. Not really a porno, but it is topless, yeah it's a bit silly, but the classic rock selections it's set to aren't that bad.
And when I was there, the show had this cute redhead aerial silk/tissu performer with nice... well, yeah. If you like a good look, be sure to get a table closer to the stage.
How are you an avid player never having played in a casino before ;p it's a bit different, especially in vegas.
My advice is to not waste all your time gambling while you are there, as mentioned, see some shows or even the hoover dam. It's a nice area. Try and pregame before any strip joints, alcohol is outrageously priced at a lot of places. Order strong drinks from the waitresses at the casino tables, they are free, but can take a while to get to you, so don't get weak shit.
Thanks for the tips on Aria, probably going to vegas later this year to get away from atlantic city. Getting sick of trop/harrahs poker rooms here even if they pay out well.
Also, forgot to mention.. Venetian Boat Ride was awesome.. very serene when me and the wife did this as well.
