okay it's honestly a matter of taste. Cowboy bebop is very very very americanized, it was intended to be that way but it's got a film noir vibe to it at times. I personally enjoy it and a lot of people happen to think it's pretty much classic but I guess people can deem it overrated. The series i particularly liked (in order of most simple to most convoluted) and watched multiple times were

Trigun
Death Note
FMA: (Brotherhood)
Code Geass
Escaflowne (This is about as close I'd get to feeling guilty about liking something though.)

but honestly most of the animation I spend time watching is american.
