You've taken your sample of 30 console users you know and concluded that console users in general are terrible, when you don't actually have enough data to conclude anything at all.
The functional limitations I've found from playing on PS2 basically boil down to:
1) My WAR can only swap 6 pieces when going to WS. Head/Neck/Ring1/Hands/Feet/Waist, done. I'd swap an earring, maybe ammo, and potentially back and body sometimes if I had more space. However, my WS gear for those slots is what I TP in except for Steel Cyclone, which I don't use as a player with useful jobs.
2) RDM/NIN tanking was a bitch with a 6-slot macro limitations. I know I never lived up to the possibilities here, and as a result I only tanked JoL because I couldn't swap all my PDT gear on in time for TP moves. If I press macros too quickly the ends of the previous macro don't get executed, so I had to wait a bit for each to execute and there just wasn't enough time. JoL's worthwhile spells take time to cast and it's obvious when he's summoning, so I had plenty of time and could baby my macros along.
3) I can't see other people's TP. This makes me kinda pissed when I'm in a party with SAMs and Dragoons and we could be making Light regularly if I could see when to mix in KJs. It's also annoying if I'm trying to break trial weapons.
4) Obviously I can't do things that require AP radar. VNM is ridiculously annoying and Sheep in Antlion's Clothing has never been an option for me.
So, my functional limitations mostly hurt me. They may gimp me a bit in the future, but at the moment it's mostly me. You guys just haven't met the upper 5%. Also, playing on console means you aren't required to have PC internet access nearby, but it doesn't preclude it. I catch wireless internet with my computer and feed it out the ethernet port to my PS2, so I'm not online if my computer is off. A bit of a complicated solution, but it let me get around my campus's MMO proxy.
