Surround Sound setup suggestions

So I'd like to get a nice sound system setup, but I am not really an expert in audio tech. I'd like to think I've got the knowledge to get everything working, as friends/family are starting to come to me about the topic for themselves. I usually am the person who sets them up with technology so it's a little embarrassing to be so ignorant.

I have a Denon AVR-989 receiver I won at work (http://www.amazon.com/Denon-AVR-989-.../dp/B001CSBEKE) that I use with two four foot speakers that date back to the 70s. I got a no-name subwoofer from people getting rid of two 3 foot speakers with it (I have those speakers too but not hooked up).

I'd like to find a quality 7.1 (or 5.1, I guess) setup, even if it means I'd stop using the 70s speakers (which were, as my father says, great quality speakers in their day) which have served me well over the years.

Receiver gets inputs from a PS3, Optical audio from a computer, PSP, assortment of standard RCA. I'd like to get a very nice setup for PS3 games/movies as well as get full surround sound for FFXIV. I like to use a projector for visuals or a Dell 3008WFP, as I have no TV the projector/monitor cover those jobs.

Budget-wise, I'd be happy if it was 1-2k, even moreso if it was under 1000$.

Any recommendations, or sites that might make for good reading? I was on Hardocp's forums when I was in the market for a monitor two years ago and it was pretty great, but their audio section is more for PCs http://hardforum.com/index.php.

tl;dr - Want to find a great 7.1 setup, lets pretend money is no object within reason

Dell is supposedly releasing an updated version of the W3008WFP this fall. The Dell U3011. Supposed to have In-plane switching and something else over the 3008, I can't remember. I am holding off on 2560x1600 myself until I see the U3011. I think it maybe be in the $1.3-$1.5k range. Can't remember where I saw this info.
