It clearly asks "which one" page, implying that it wants the page number.
It's 999 obviously.

#12 caused me the most trouble. I just can't fathom why the answer is what it is. I ended up just trial-and-erroring it.

It's a simple shift cipher. The page-1 at the bottom means shift each letter back one, i.e. b becomes a, c becomes b, etc. After that it's the same kind of puzzle as #16.

Don't think numbers, it's irrelevant. You can apply the same system to letters.

Belkin = 3
Tyche = 1
Numbers = 2
8 = 2
