skill in ffxi can be compared to skill in a language: it's partly the knowledge you have (say, vocabulary, grammar rules, etc) but the important part, the "skill" part, is how you can apply that knowledge in a real conversation/piece of original writing. No, there's not too much physically difficult when it comes to talking (just like there isn't a whole lot too physically difficult when it comes to hitting macros or maneuvering a character) but doing the right things at the right times and coordinating your speech/ideas are certainly skill-based, and we can rather easily differentiate between skill levels.

but I can't help but read stuff about people trying to talk about skill in videogames; it's like the allure of turning on FNC just to rage a little bit.

I just hate the viewpoint of "well if it ain't a fightin'/shootin' gaem then it takes no skill". it's basically a videogame equivalent of ardent basement-dwelling metal fans (the other videogame equivalent of said people is the gameplay-purism viewpoint).

I do still play FFXI, but I've too busy so I've only been able to log in once a week or two. This saved me from buying ACP.

that may or may not be true, but to draw a comparison, playing chess takes none of the physical reaction times or motor skills of playing basketball, but there's no denying that chess takes skill.

FFXI isn't anywhere near chess... you don't even really have to think to play it.
Remember that time when you were fighting [INSERT HNM or STRONG ENEMY HERE] while watching [INSERT TELEVISION SHOW HERE] and were still doing pretty good. Maybe not quite as well as you would have if you were paying full attention to the game, but close enough so that you still downed the enemy in a timely fashion?

Or maybe you could do like me and play another game at the same time you're playing FFXI. I don't mean a turn based game, I mean real-time shit.

Honestly, I beat Tales of Eternia while climbing Nyzul on mah BLU.
