I rinse meat unless it's ground. Not scrub, just a rinse to get that viscous film off certain meats that have pooled a little. Pat to dry, then season.

I will occasionally wash chicken but most of the time no, its getting cooked anyways

Growing up I’ve always been taught to wash and clean the meat with a citrus like an orange or limes.
I used to, then I found out you have a greater chance of spreading salmonella if you wash it first.

better question might be how diligently and promptly do you clean the cutting board and/or areas in contact with raw meat?
Wooden cutting boards are for fruits and vegetables only, they get hand washed. Dishwasher safe cutting boards are used for meat and placed in the dishwasher right after I'm done cutting.
Beef I can usually wait until I'm done handling it but chicken it feels like I gotta wash my hands every 10 seconds.
