Order of Ecclessia and both Sorrow games are pretty top tier.
Circle of the moon is pretty good.

I was too young at the time to appreciate what I was playing, but looking back on it now I cant believe that was on a game boy advanced lol. Really tight controls and great combat system. Cant go wrong!

Super Castlevania IV, Rondo of Blood, SoTN, any of the GBA/DS ones, and Lords of Shadow 1 are all worth playing today.
Also I'd count Bloodstained as a Castlevania game

Yeah Curse of the Moon is NES Vania styled, and Ritual of the Night is the big boy

Ritual of the Night is really good. Only real issue I had with it are the weird glitches you'll encounter sometimes and the blatantly rushed final two zones. Other than that it's a pretty solid vania that fuses the gameplay of OoE and RotN.
Hopefully we'll actually get some of the updates here soon now that they've at least partially unfucked the Switch version. (it's still basically unplayable to me compared to the PC version)
Yeah I would love to give it another run with Zangetsu.
Just don't try doing what I did and try to platinum the game on your first play through, become a god and laugh at the final boss as you destroy it.
I have only ever played the ones that were released on N64 and most CV fans seem to hate those but I thought they were aight for the time
