1. decide on a)mage, b)dd/tank job
a) lvl blm>18, whm>37 because whm serves as all purpose sub for mage.
b) mnk>18, war>37 because war does the same for DD/tank
then nin eventually, because every job subs nin eventually.
all world's are the same afaik.
ON ANOTHER NOTE:
I was being semi serious about my original comment, if I was starting fresh, I'd just wait for WoTG to be released and see how the new jobs are. But you'd probably still need the main subs anyway.

Edit your post to include a serious answer, if I am not pleased by the time I return to my main PC at about 1-2pm EST time sunday, youll find our solution quite handy.
Server: does it really matter? Just go where your friend are if you have any who still play
Job: At this point, level something that is useful solo and for endgame first, otherwise, you will have trouble getting started (get a linkshell, do mission..etc). Blm or rdm are good start, and generally wanted. Brd is cheap, always wanted and get party easily. Whm is decent too.
i suggest that you dont level a mainjob to 75 first that is going to cost you a lot of money in consumables. and by that i mean ninja and ranger (and maybe corsair). why not? because you'll be spending all your free time farming for money to get tools/ammo instead of xp'ing or doing other fun stuff.
i would also suggest that you level a job that is going to get you the most invites to xp. this will provide the most entertainment (hey, thats what we all play this game for, right). and by that i mean something like war, pld, whm, rdm, mnk, drk, sam, and maybe smn and cor.
any which way i'm sure you will find which job you want to play to 75 first on the road to 30. it may even bee the one you take to 30 first. do yourself a favor though and finish it off to 37 right off the bat, even if you dont intend to take it higher.
level BRD and RDM

You should level up RDM again. Good Dispel macros are hard to find.
If I had to start up again Bard would be at the top of my list. As far as other mage jobs they may require more gil then you can generate at the lower levels. Bard is cheap cheap cheap and is always exp party friendly. Likewise the only subs you'll really need at the lower levels is Whitemage...Ninja later.
As far a melee jobs go Warrior is a good option but there is that oh so nasty Ninja sub which will be the most beneficial a bit later...also see my previous comment about gil but with respect to this job. Besides you would use Ninja sub with Bard anyway so could be a good fit. You'd only need to level up 2 jobs to 37 or 40 for BCNM items and then you could decide either War or Brd to 75.
Otherwise, I've found Paladin a job that isn't terrible expensive and the AF is tremendously useful and saves lots of gil. Exping in Toah areas saves gils on food since you may end up killing birds primarily.
I couldn't in good faith recommend any other jobs besides those two~three starting out. Gils will be the limiting factor more so then anything else...in game that is.
