Since the update, I was wondering, would i be able to use Triumph Earring for WS better? or Ethereal earing 5 attack?

An item with 5 STR on it would give 5 ATT as well (in addition to whatever attack value is listed on it). Doesn't mean 5 ATT = 5 STR.

It basically means the Triumph Earring will give you 2 STR and 2 ATT.

So it's a matter of 2 STR vs 3 ATT

Not exactly...the 1 STR = 1 Attack deal is only for 2-handed weapons, and it does not reciprocate. 5 STR = 5 Atk, but 5 Atk =/= 5 STR. STR will still figure into your damage more as the core of the damage you do is your STR minus the mob's VIT, and STR is also a % modifier on many weaponskills.
