Explain the difference between these Mobos

They seem nearly identical to me, except for the fact that the P5K3 supports WiFi and DDR3, and the Striker Extreme has a third PCI-express slot in case you want to do SLI and run a physics card.

Which is better in terms of gaming and overall?

The Striker Extreme is a Nvidia 680i board, has 2 16x pci-ex and 1 pci-ex 8x slot, supports SLI (connecting 2 Nvidia graphic cards for improved performance, does not working with FFXI) and other Nvidia 680i features.

The P5K3 is an Intel chipset so it supports all of Intel's features and whatnot. DDR3 is retardedly expensive.

If you are for an high end Nvidia based build with the future possibility of adding a second video card you should probably go with the Striker Extreme.

I use the p5k3 deluxe and corsair xms3 DDR3 ram and while the ram itself is a bit expensive you are absolutely getting what you pay for. That said, like SLI there isn't that many things that can take advantage of DDR3 ram right now so unless you are just trying to future proof you'd be fine getting cheaper pc2 6400 DDR2 ram or something like that on the p5k board that's not ddr3 only.

Also the p5k3 deluxe with the p35 intel chipset is probably one if, of not the best northbridge chipset you can get right now. It can handle loads of Overclocking and it's as stable as anything out if you are into that kind of thing.

I don't see how you can really complain about the expense of DDR3 when SLI is even more of a waste of money.

Sorry, I'm not really complaining, just a comment. But yeah both are expensive. If you are running a large display, SLI does help.

my bad too, i didn't mean you personally complaining, just people in general tend to say DDR3 is useless and to expensive and then go spend 1200 on an SLI setup on a 22" monitor.

Sure if you're using like a 40+ inch rig or something like that yeah SLI is gonna help. but for 90% of the people running SLI, it's probably not on something that big that'll actually utilize it.

In retrospect though, I probably wouldn't do DDR3 again quite yet, i'd stick with some pc2 6400 and just overclock it to the 1333mhz anyway and put the 300+ i saved into a monitor or something since mines only a 17" flatscreen, but I dont' regret it. It runs amazingly fast.
