i have personally never made jerky. however, my coworker tells me that his mother used to make it for him. he told me that they did a dry rub- mostly salt and pepper- instead of a marinade becuase the added moisture of the marinade added a long time to the drying process. as for dehydrating the meat, obviously you need to do that fairly quickly otherwise it will just rot. he told me that they used to put the oven on a low temp and leave it cracked open to allow the moisture to escape and that it took the better part of the day for it to totally dry out depending on how thickly they cut it.
My Grandpa makes the most amazing beef jerky ever. I'll see if I can get a recipe. It's seriously 1000000000000000000 times better than anything I've ever bought from the store.
Wasnt there an episode of Good eats where Alton Brown made some beef jerky. You should look that up.

There's the recipe and ingredients. He used flank steak in the show and he recommended it to be the best for cutting. Also which they dont mention in the recipe he took air filters and put the jerky in the crevices of the air filter. Then place the air filters on top of a fan faced right-side up. Don't stack more than three though on the fan. I don't know if you want to spend the money on air filters but i figured I would throw that out there.

What you need to do, is to take the meat sections, cut them in strips maybe half a centimeter maximum. Then you need a marinade. I personally recommend a lotta soy sauce, a whole bottle of Tabasco, a crapload of ground pepper, maybe 1/4-1/3 a bottle or Worshestier (sp) suace, and if they have it in your area Liquid Smoke. Liquid Smoke is a really, really, really f'ing good marinade for jerky, or just for cooking meat.
Anyway, marinate in the above crap, increasing the ratios for taste for a day or 2, then toss on the dehydrater, adding ground pepper and more hot sauce to each piece when you begin the process.
You can taste the liquid smoke btw, and will learn how much to use as you do it. If you use too much, it will almost make you puke, like Worchestier sauce.
I haven't seen the American Eats jerky episode, but I got the idea to try and make my own from an episode of Modern Marvels about snack foods. I went and bought a dehydrator today and I have a bunch of meat marinating right now.

I have a TON of deer and elk meat back home with my parents, but I haven't been hunting since I moved out a couple years ago. I'm gonna ask my dad to buy a ton of dry ice and ship me some elk.![]()
I love jerkied meat that's made from game animals; deer, buffalo, bison, even caribou. There's just that tangy gamieness you can't get with beef.

my uncle makes venicen jerky I think he just uses a dehydrator, i'm not sure what he does to the meat before putting it in.
but it's fucking fantastic and better than any jerky i've ever had....and i likes me some jerky.
