Could anyone point me to a decent Leveling Guide from Level 1 up.
Specifically looking for either Paladin, Warlock, or Rogue. (Horde side is preferable) I played years ago, before Burning Crusade. So I'm completely out of touch.

If you are looking for the most streamlined guide I'd try Zygor's Horde Leveling guide. Its an addon that you would normally have to pay for, but putting DRM on a script is a losing battle so it can be found on various torrent sites. You'll need cartographer installed as well to be able to use it.
Other options - Tourguide + Cartographer. Minimalist interface on tourguide itself.
With both addons you do not need to follow them exact, you can skip stuff as you wish. I'm not sure how zygor's works 1-70 but I know above 70 it is tuned such that you get ahead of it and quests go green, especially with rested.

Tourguide + TomTom + LightHeaded is your best bet unless you play WoW in windowed mode or have two screens to keep the levelling guide open and accessible at all times.

I leveled like 5 characters without using Questhelper, but for my new paladin I've been using it and I really think it's GREAT. It doesn't show group quests, but other than that it's just extremely helpful.

Destro can be a pain to level at low levels. Your HP/mana efficiency is piss poor and you will find yourself bandaging/drinking pretty often. You will blow things up fast, but there will be just as much, if not more down time. You will die a lot more as destro.
Once you unlock SL and imp. SL, (level 35?, don't remember exactly)things get a bit better, but it's still not as easy or efficient as Aff.
Overall, I'd recommend Aff or Demo, esp. at the beginning. Aff is easy leveling due to it's overall efficiency, Demo is easy due to power pets. Both of these specs are good for multiple mobs at once(dot/fearing/life draining for aff, and demo pets can tank multiple mobs without much effort), where as destro is better for focus bursting single mobs down fast. And if that's what you want to be doing, I'd roll a mage. Plays similar, but without having to trade your life for mana.
However... if you have a healer with you destro's output is amazing.
If you do Mage, the easiest way to level is just Fire until ~35-40, then re spec Frost. After 25 or so, as long as you keep up with instance blues, you'll likely never have to drink. This is especially true once you get Mage Armor at 34.
As Fire, I found my optimal mana/time efficient spell rotation changing with each level. Usually it was Pyro -> Fireball (-> Fireball/Fireblast, depending on mob health and your mana. Fireblast is more expensive, but instant.) However, some levels I was able to just two shot mobs with Pyro -> Pyro (Casting time may seem long, but 2 Pyros is shorter than Pyro -> Fireball -> Fireball.) The second Pyro will always go off before the mob reaches you as long as you take the Flame Throwing talent.)
As Frost, you basically just spam Frostbolt. The reason it's not really efficient to do this prior to 30ish is, you can't max out Shatter, which makes it so that spamming Frostbolt will take about half your mana per mob. Not very attractive. I don't like speccing Frost until Ice Barrier, but that's just me.
Before I forget-- Do NOT level as Arcane. At least, not before 60. Not mana efficient at all. Like I said, as Fire & Frost, after 25 or so you'll never drink if you're smart and in instance blues. Mage is pretty gear dependant, so I would suggest keeping up with instances.
For glyphs you'll want Evocation or Frost Nova for your first Major. After that, get Mage Armor. Minors... are mostly aesthetic. If you want a useful one, go with Slowfall. I'll link you some talent builds if you want later for leveling, but I have to get to class now!

I really gotta think about which I want to try. I'm leaning more towards Mage now.
Do you have friends who will help you get gear, or give you some starting gold? If you are starting from scratch, I would recommend lock. It's success is less reliant on gear, as after level 10 you will have your own personal tank pet. You can always make a second character too, and see which you like best.
I joined a server with some friends of mine from FFXI. So they will probably help me out a little.
As for monies, I was going to go with Tailoring and Skinning. That should keep me decently funded yes?
Mining and skinning would probably be a bit more lucrative. Gathering professions are generally the best for making money, especially while leveling. Mining/herbalism is the best.. but that requires you to keep toggling between Find Herbs & Find Nodes... so it's a bit more of a bitch.

Only differences between the addon and his online guides are, obviously, there's no map. Instead, you get an arrow pointing you where to go.. It's really good. Here it is if you want it:
