As long as you know that the 8800GTS is huge liek Xbox and is about a foot long and wide as 2 pci slots, get that! Though if you can get your hands on a 8800GT it's a much better power/dollar (pound?) deal!

Running SLI gives you about a ~40% performance increase over running just a single card. The 8800GT is already a 512MB card and factory over clocked to 600-700Mhz depending on which model you get. I really doubt you're going to find two SLI-capable cards that will surpass the performance of a 8800GT while being a lesser cost.
Also recommending the 8800GT. For a bit of extra juice you COULD go with the NEW 8800GTS 512MB.

Getting the 8800 GT, the TV I was gonna get has gone up in price so getting a 24" monitor instead
24" screens have a native resolution of 1920x1200 which is pretty high and might be a bit much for even the 8800GT (will be fine in older games like FFXI), a 21-22" screen typically has a resolution of 1680x1050 which should be a better match.
I have a 7900GS which runs at 1920X1200 native, after being used to that for 2 years I couldn't go lower I don't think, looking at my friends 1680X1050 looks odd.
