I guess it's just me but I think the character deserves a full fledged movie. Throw my man a bone Disney!

You can better develop a storyline through a series, but Marvel has been skimping on episodes for everyone.

You can probably skip Iron Fist in its entirety. And maybe only need the last episode or two of Defenders, depending on how much (if any) carries over. Oh, and you should probably only watch season 1 of JJ (though I haven't heard anything about her joining the MCU as of yet).
As of the release of Echo all the Netflix series are officially MCU canon, but yeah safe to assume some of them are not worth the effort since it at current it doesn't seem like they're bringing Jessica Jones/Luke Cage/Iron Fist over any time soon.
But other than Iron Fist they're all still worth the watch if you have time. Defenders wasn't great but it's vital to the storylines of Jessica Jones and Daredevil
Side note reading about the development on this series and the original show runners deciding to more or less do a full on reboot is crazy. Hopefully this is an instance where corporate interference actually helps, since Daredevil obviously had a format that worked and they basically retooled the entire series to bring it back to that
I watched season 1 and 2 of Daredevil, season 1 of Jessica Jones, and I got halfway thru season 1 of Luke Cage. Haven’t seen anything else.
To be fair I feel like Jessica Jones was probably the most “complete” series out of the Netflix shows if that makes sense. I liked it.
Also, Daredevil is an absolute must watch just for some of the epic fight scenes.
I just want to reiterate - on the off chance that it hasn't been made abundantly clear by now - you should probably skip Iron Fist.

Season 2 of Iron Fist is much better but is it worth watching season 1 to get to? Probably not.

I'll play minor devil's advocate; I enjoyed the story and some of the characters from Iron Fist. The step-brother dude who gets high out of his mind and flips off all the things in the office (someone has it as their signature here) and Colleen were solid I thought. Danny is just insufferable and actively inflicts pain anytime he's on screen. The action is also a noticeable downgrade from everything else Marvel TV was doing at the time.
